Ragi Foxtail Millet Dosa

Ingredients:
- Ragi - 1/2 cup
- Foxtail Millet -1/2 cup
- Red Rice - 1/2 cup
- Urad dal - 1/2 cup
- Fenugreek seeds - 1/2 tsp
- Cumin seeds - 1 tsp
- Green Chili - 1
- Salt to taste
- Oil - 1/2 tbsp
Procedure:
- Take ragi, foxtail millet, red rice, urad dal and fenugreek seeds in a bowl. Clean them and rinse them at least 3-4 times.
- Soak them for at least 6 hours.
- Then grind them into a fine paste. Add cumin seeds and and green chili while grinding
- Pour the mixure into a steel container. Cover it and keep it in a warm place for fermentation for at least 12 to 14 hours.
- After 12 to 14 hours your batter is ready for making the dosas. Add salt and 1/2 tbsp oil to it and mix everything well.
- Grease cast iron pan and heat it well. Then add and spread the batter evenly. Cook it by covering with a lid and your crispy dosa will be ready in a few mins.
